Pasta & Veggie Stir Fry

Pasta & Veggie Stir Fry

Ingredients

8 ounces Eden Organic Kamut Udon
or any Eden Udon or Soba

.88 ounces Eden Whole Shiitake Mushrooms, 1 package, soak in 1 cup hot water for 20 minutes
or 1 package Eden Sliced Shiitake Mushrooms

1 cup pea pods, chopped

3 cups broccoli, chopped

1/4 tsp Eden Hot Pepper Sesame Oil

2 tsp Eden Organic Sesame Oil

2 cloves garlic, minced

1 medium red bell pepper, chopped

1 Tbsp Eden Mirin

1 Tbsp Eden Organic Brown Rice Vinegar

1 1/2 Tbsp Eden Shoyu Soy Sauce

1 Tbsp Eden Organic Kuzu Root Starch, dissolved in 1/4 cup cold water

1/2 cup green onions, thinly sliced

Directions

Cook pasta as package directs, rinse, drain and set aside. Reserve shiitake soaking liquid, discard stems and slice tops. Cook mushrooms in soaking water for 15 minutes. Heat oil, sauté broccoli and pea pods for 2 minutes. Add red pepper and garlic, sauté for 1 more minute. Add mushrooms, cooking liquid, mirin, brown rice vinegar, and shoyu. Bring to a boil. Add dissolved kuzu, stirring constantly, cook until mixture thickens and becomes clear. Serve over pasta and garnish with green onions.
