Soba Noodles with Ginger Vinaigrette

Soba Noodles with Ginger Vinaigrette


8 ounces any Eden Soba

1/2 cup carrots, finely julienned

1/2 cup fresh daikon radish, finely julienned

1/2 cup scallions, finely chopped


1 Tbsp Eden Toasted Sesame Oil

1 Tbsp Eden Sesame Oil

1 Tbsp Eden Brown Rice Vinegar

1/2 tsp fresh ginger root, finely grated

1/2 cup shallots, finely minced


Combine the ingredients for the vinaigrette in a small jar and shake well.

Cook the noodles as package directs. Rinse, drain and plunge into ice water. Drain again and place in a bowl. Add the dressing, carrot, daikon and scallions. Toss to mix. Season with additional shoyu, if desired.
