Quinoa Veggie Salad with Mint and Pine Nuts

2/3 cup Eden Quinoa, washed and drained
or Eden Red Quinoa
1 1/4 cups water
2 tsp Eden Shoyu Soy Sauce
1/3 cup pine nuts, lightly pan toasted
3 1/2 Tbsp scallions, finely chopped
2 1/2 Tbsp fresh mint leaves, chopped
2/3 cup cauliflower, small florets, blanched 2 minutes
Place the quinoa and water in a sauce pan, cover and bring to a boil. Reduce flame to medium-low and simmer for 20 minutes. Remove, place in a bowl and allow to cool for a few minutes. Sprinkle the shoyu, pine nuts, scallions, cauliflower and mint. Mix and serve.
