Pasta Salad with Artichoke Hearts & Cranberries

2 cups Eden Vegetable Spirals
or any Eden Spiral Pasta
2 cups broccoli, chopped
2 cups cauliflower, chopped
1 3/4 cup artichoke hearts, water packed, drained
1/4 cup green onion, finely chopped
1/2 cup organic tofu mayonnaise, store bought, or see Eden's recipe
2 Tbsp Eden Dried Cranberries
Cook pasta according to package directions, rinse, drain and set aside in a serving bowl. Steam the broccoli and cauliflower for 2 minutes and cool. Slice the artichoke hearts into bite size pieces. Add all ingredients, except avocado, to the pasta and mix with mayonnaise. Chill. Before serving garnish with cranberries.
