Pasta Bean Salad

Pasta Bean Salad


2 cups Eden Vegetable Shells
or Eden Small Vegetable Shells

2 cups broccoli, florets

1 cup carrots, julienned

1 medium red bell pepper, diced

1 cup green onion, sliced thin

15 ounces Eden Navy Beans, drained
or cooked Eden Dry Navy Beans


4 cloves garlic, pressed

1/4 cup Eden Toasted Sesame Oil

2 tsp Eden Umeboshi Paste, or to taste

1/4 cup water


Cook pasta as package directs, rinse and drain. While pasta is cooking, bring 3 cups water to a boil. Blanch carrots and broccoli, separately for 1 to 2 minutes each. Vegetables should be lightly cooked, crisp and bright. Drain and rinse quickly under cold water to set the color. Mix pasta, beans, and vegetables. Prepare salad dressing by mixing ingredients in a blender. Add water to desired consistency. Mix into salad. Serve cold or hot.
