Pasta Bean Salad

Cook Time 15 minutes
Cook pasta as package directs, rinse and drain. While pasta is cooking, bring 3 cups water to a boil. Blanch carrots and broccoli, separately for 1 to 2 minutes each. Vegetables should be lightly cooked, crisp and bright. Drain and rinse quickly under cold water to set the color. Mix pasta, beans, and vegetables. Prepare salad dressing by mixing ingredients in a blender. Add water to desired consistency. Mix into salad. Serve cold or hot.
