Italian Pasta Salad

12 ounces Eden Vegetable Spirals
or any Eden Spiral Pasta

16 whole pitted Kalamata olives
or jumbo black olives

28 ounces Eden Diced Tomatoes, drained

1/3 cup red onion, finely chopped

1/4 cup fresh parsley, minced

1/2 cup cucumber, chopped


1/4 cup Eden Extra Virgin Olive Oil

1/4 cup Eden Red Wine Vinegar

2 cloves garlic, minced

1 Tbsp dried oregano

1 tsp Eden Shoyu Soy Sauce


Prepare pasta as package directs, rinse and drain. Add olives, tomatoes, onion, parsley, cucumber and mix. Prepare dressing and mix into the salad. A great salad served room temperature or chilled.
