Rye Pasta Cauliflower Dill Salad

Serves 5 | Prep Time 10 minutes | Cook Time 15 minutes

Ingredients

12 ounces Eden Organic Rye Spirals
or any Eden Orgnaic Spiral Pasta

6 cups cauliflower, small florets, blanched 3 min., rinse to cool

1 cup red onion, coarsely chopped, blanched 2 min., rinse to set color

2 Tbsp fresh dill, chopped
or 1 tsp dried dill

3 Tbsp Eden Extra Virgin Olive Oil

2 cloves garlic, minced

3 Tbsp lemon juice, freshly squeezed

1 tsp Eden Sea Salt

1/4 tsp freshly ground black pepper, or to taste

Directions

Cook pasta as package directs, rinse, drain and set aside. Place all ingredients in a mixing bowl, and gently toss to mix. Serve room temperature or chilled.
