Rye Pasta Cauliflower Dill Salad

Ingredients

  • 12 ounces Eden Rye Spirals
    or any Eden Orgnaic Spiral Pasta
  • 6 cups cauliflower, small florets, blanched 3 min., rinse to cool
  • 1 cup red onion, coarsely chopped, blanched 2 min., rinse to set color
  • 2 Tbsp fresh dill, chopped
    or 1 tsp dried dill
  • 3 Tbsp Eden Extra Virgin Olive Oil
  • 2 cloves garlic, minced
  • 3 Tbsp lemon juice, freshly squeezed
  • 1 tsp Eden Sea Salt
  • 1/4 tsp freshly ground black pepper, or to taste

Directions

Cook pasta as package directs, rinse, drain and set aside. Place all ingredients in a mixing bowl, and gently toss to mix. Serve room temperature or chilled.
