Cream of Tomato Dill Soup

Cream of Tomato Dill Soup


29 ounces Eden Diced Tomatoes, 2 cans, do not drain
Eden Tomatoes w/Basil, or Eden Tomatoes w/Roasted Onion & Garlic

1 cup Eden Navy Beans, do not drain

2 cups Edensoy Unsweetened
or Edensoy Original

1 medium onion, diced

2 cloves garlic, diced

1/4 cup celery, diced

1 tsp dried thyme

2 tsp organic maple syrup

1/8 tsp freshly ground black pepper, or to taste

1/2 tsp Eden Sea Salt, or to taste

1 Tbsp fresh dill, finely chopped
or 1 tsp. dried dill


Place all ingredients except for the Edensoy and dill in a medium soup pot, cover and bring to a boil. Reduce the flame to medium-low and simmer, stirring occasionally, for 25 to 30 minutes. Remove from the flame. Blend in a blender. Place back in the soup pot, add the Edensoy and reheat, but do not boil. Place in serving bowls and garnish with dill.
