Lentil Tomato Soup

Ingredients
30 ounces Eden Organic Lentils w/Onion & Bay Leaf, 2 cans, do not drain
14 1/2 ounces Eden Organic Diced Tomatoes, 1 can, do not drain or Eden Organic Diced Tomatoes w/Basil
2 cloves garlic, minced
1/2 cup diced onions
1 medium organic potato, diced
1/4 cup celery, diced
1/4 cup carrots, diced
1/2 tsp dried oregano
1/2 tsp crushed bay leaf
1 Tbsp Eden Extra Virgin Olive Oil
1/4 tsp Eden Sea Salt, or to taste
2 Tbsp fresh parsley, minced

Directions
Heat oil in a soup pot, sauté the garlic and onions until onions are translucent. Add all other ingredients, cover and bring to a boil. Simmer for 15 minutes. Garnish with parsley.
