Spanish Rice

Ingredients

  • 3 cups organic long grain white rice, washed and drained
  • 5 cups water, including shiitake soaking water
  • 1 pinch Eden Sea Salt
  • 3 Tbsp Eden Extra Virgin Olive Oil
  • 3 cloves garlic, minced
  • 1 medium onion, diced
  • 1/2 cup Eden Sliced Shiitake Mushrooms, soaked 10 minutes in 1 cup warm water, coarsely chopped
  • 1 1/2 cups organic tomatoes
  • 1/2 cup organic sweet corn, fresh or frozen, blanched 2 minutes
  • 1 cup pitted black olives, chopped
  • 1/2 cup green beans, remove stems, slice in 1 inch lengths
  • 1/2 cup Eden Spaghetti Sauce
  • 1/2 tsp dried basil
  • 1 tsp minced jalapeno
  • 1/2 cup Eden Crushed Tomatoes

Directions

Heat up oil in a heavy cooking pot. Sauté garlic and onions for 3 minutes. Add rice and sauté another 5 minutes. Add all remaining ingredients, cover and bring to a boil. Simmer over a low flame for 20 minutes or until rice is done.
