Spanish Rice

Serves 8 | Prep Time 10 minutes | Cook Time 25 minutes

Spanish Rice

Ingredients

3 cups organic long grain white rice, washed and drained

5 cups water, including shiitake soaking water

1 pinch Eden Sea Salt

3 Tbsp Eden Extra Virgin Olive Oil

3 cloves garlic, minced

1 medium onion, diced

1/2 cup Eden Sliced Shiitake Mushrooms, soaked 10 minutes in 1 cup warm water, coarsely chopped

14 1/2 ounces Eden Organic Diced Tomatoes w/Green Chilies, 1 can, do not drain

1/2 cup organic sweet corn, fresh or frozen, blanched 2 minutes

1 cup pitted black olives, chopped

1/2 cup green beans, remove stems, slice in 1 inch lengths

1/2 cup Eden Organic Spaghetti Sauce

1/2 tsp dried basil

Directions

Heat up oil in a heavy cooking pot. Sauté garlic and onions for 3 minutes. Add rice and sauté another 5 minutes. Add all remaining ingredients, cover and bring to a boil. Simmer over a low flame for 20 minutes or until rice is done.
