Kidney Bean Spread with Tomatoes

Ingredients

  • 15 ounces Eden Kidney Beans, 1 can, drained
  • 2 cloves garlic, minced
  • 1/4 cup fresh parsley, minced
  • 2 Tbsp lemon juice, freshly squeezed
  • 1/2 tsp ground cumin
    or ground coriander
  • 2 tsp Eden Shoyu Soy Sauce
  • 2 Tbsp red onion, minced
  • 1 cup Eden Diced Tomatoes, drained

Directions

Reserve cooking liquid from the beans. Place all ingredients in a food processor or blender until creamy. Add some of the bean cooking liquid until the desired consistency. Serve with Eden Brown Rice Chips, tortillas, pita bread or vegetables.
