Black Soybean Hummus

Ingredients

  • 1 clove garlic, minced
  • 15 ounces Eden Black Soybeans, 1 can drained, reserve liquid
  • 2 Tbsp red onion, minced
  • 3 Tbsp lemon juice, freshly squeezed
  • 1 1/2 Tbsp organic roasted tahini (sesame butter)
  • 2 tsp fresh cilantro, finely chopped
    or fresh parsley
  • 1/2 tsp ground cumin
  • 1 tsp Eden Ume Plum Vinegar
  • 1/8 tsp cayenne pepper, or to taste
  • 1 Tbsp Eden Extra Virgin Olive Oil
  • 1/4 cup green onion, finely chopped for garnish

Directions

Combine all ingredients, except the green onions, in a food processor, adding about 3 tablespoons reserved bean liquid to create a thick puree. Garnish with green onions. Serve with Eden Brown Rice Chips.
