Cook pasta per package directions, rinse, drain and set aside. Heat the oil in a large skillet and sauté the garlic for 1 minute. Add the mushrooms and half the soy sauce. Sauté for 3 to 4 minutes. Add the carrots, tofu and pasta. Sprinkle on the remaining shoyu, cover and reduce the flame to medium-low. Cook for 5 minutes. Remove the cover and mix the pasta and vegetables. Add more shoyu, if desired. Turn the flame to medium. Add the snow peas and scallions. Sauté 1 to 2 minutes until the pasta is hot and the snow peas and scallions are done.
