Garbanzo Carrot Salad

Garbanzo Carrot Salad

Ingredients

15 ounces Eden Organic Garbanzo Beans, 1 can drained
or cooked Eden Organic Dry Garbanzo Beans

1/3 cup carrots, julienned

1/4 cup fresh parsley, minced

2 Tbsp organic white sesame seeds, dry pan roasted, optional

1/4 cup green onions, finely chopped

2 Tbsp organic roasted tahini (sesame butter)

1 clove garlic, pressed

1 tsp Eden Ume Plum Vinegar, or to taste

2 tsp Eden Organic Gomasio
or Eden Organic Garlic Gomasio

Directions

Mix beans, carrots, parsley, sesame seed, and green onions together in a bowl. In a small bowl, blend the tahini, garlic, water, and ume plum vinegar. Pour over the salad, and toss. Season with extra vinegar, if desired. Serve on a bed of crisp lettuce. Sprinkle on Eden Organic Gomasio or Garlic Gomasio.
