Baby Spinach, Pepita & Cranberry Salad

Serves 6 | Prep Time 10 minutes | Cook Time 0 minutes

Ingredients

8 cups baby spinach

2 ounces Eden Organic Pumpkin Seeds
or Eden Organic Spicy Pumpkin Seeds

2 ounces Eden Organic Dried Cranberries
or coarsely chopped Eden Organic Dried Cherries

Dressing

3 Tbsp Eden Extra Virgin Olive Oil

3 Tbsp Eden Organic Apple Cider Vinegar

1 clove garlic, minced

1 Tbsp fresh lemon juice

1/8 tsp Eden Sea Salt

1/8 tsp freshly ground black pepper

(Add All Eden Ingredients to Shopping Cart)

Directions

Place spinach in a salad bowl and toss with pumpkin seeds and cranberries. To prepare the dressing, place all remaining ingredients in a blender and blend or whisk in a small bowl. Drizzle over the salad.
