Sautéed Collards with Cranberries & Almonds

Serves 4 | Prep Time 5 minutes | Cook Time 10 minutes

Ingredients

1 Tbsp Eden Extra Virgin Olive Oil

4 cups collard greens or kale, remove and finely chop stem, thinly slice leaves on a diagonal

1 pinch Eden Sea Salt

4 ounces Eden Organic Dried Cranberries

2 ounces Eden Organic Tamari Roasted Almonds

2 tsp fresh lemon juice

Directions

Heat the oil in a large skillet and sauté the collard stems for 1 minute. Add the collard greens and sea salt. Sauté another 4 to 5 minutes. Add the cranberries and sauté another 1 to 2 minutes until the greens are tender. (If using dried cherries, coarsely chop before adding.) Remove from heat, sprinkle lemon juice over and toss in the almonds. Place in a serving bowl.
