Raspberry Ume Plum Vinaigrette

Ingredients

  • 1 1/4 cups fresh or frozen raspberries
  • 1/2 cup parsley springs, minced
  • 1/2 cup water
  • 3 Tbsp organic maple syrup, or to taste
  • 2 Tbsp chopped shallots or red onion
  • 2 Tbsp Eden Extra Virgin Olive Oil
  • 1 Tbsp Eden Ume Plum Vinegar
  • 4 tsp fresh lemon juice
  • 1/4 tsp freshly ground black pepper

Directions

Place all ingredients in a blender and pulse several seconds until smooth. To store, refrigerate in a tightly sealed glass container.
