Alphabet Pasta Bean Salad

Alphabet Pasta Bean Salad


2/3 cup Eden Alphabet Pasta

15 ounces Eden Black Beans, drained
or Eden Black Soybeans

1 cup green peas, fresh or frozen, blanched 2 minutes

1/2 cup roasted red peppers, diced

1/4 cup parsley, minced

2 Tbsp Eden Extra Virgin Olive Oil

2 Tbsp freshly squeezed lemon juice

1 1/2 Tbsp Eden Apple Cider Vinegar

1/2 tsp Eden Sea Salt

1 clove garlic, minced


Cook pasta as package directs, rinse, drain and place in a mixing bowl. Add the beans, green peas, roasted red pepper and parsley.
Combine the oil, vinegar, lemon juice, sea salt and garlic. Stir to blend and add the pasta and beans. Toss and serve room temperature or chilled._p_
