Fresh Garden Salad with Miso Tahini Orange Dressing

Ingredients

  • 2 cups red leaf lettuce
  • 2 cups Boston lettuce or bib lettuce
  • 1/2 cup coarsely grated carrot
  • 1 medium cucumber, sliced
  • 1/2 cup thinly sliced red onion rings
  • Dressing
  • 3 Tbsp Eden Shiro Miso
  • 3 Tbsp organic roasted tahini (sesame butter)
  • 2 Tbsp Eden Brown Rice Vinegar
  • 2 tsp Eden Brown Mustard
  • 1/4 cup fresh orange juice
  • 1/4 cup water
  • 1 Tbsp minced fresh parsley
  • 2 tsp finely grated ginger root

Directions

Place the salad ingredients in a salad bowl and toss. Place dressing ingredients in a blender and pulse until creamy. Serve with salad.
