Tofu Mayonnaise

1 pound soft or firm organic tofu

1/3 cup water

1/4 cup Eden Extra Virgin Olive Oil

1 tsp organic lemon juice concentrate

1 Tbsp Eden Apple Cider Vinegar

1/2 tsp Eden Sea Salt

1 tsp Eden Ume Plum Vinegar

2 tsp organic maple syrup, or to taste

2 tsp Eden Brown Mustard

1/4 tsp turmeric


Blend all ingredients together in a blender or food processor. Place in a tightly sealed jar and refrigerate. Use on sandwiches, or in pasta salads. This will keep for 2 to 3 days.
