Tossed Salad with Creamy Garlic Dressing

Ingredients

6 cups mixed baby salad greens

1 medium cucumber, sliced into rounds

3 medium organic tomatoes, sliced into wedges

1 cup red onion, sliced into thin half-rings

Dressing

1/4 cup Eden Extra Virgin Olive Oil

1 Tbsp Eden Organic Yellow Mustard

1 Tbsp Eden Red Wine Vinegar

1/8 tsp Eden Sea Salt, or to taste

2 cloves garlic, minced or pressed

1/4 cup scallions, thinly sliced

2 Tbsp fresh parsley, minced or pressed

(Add All Eden Ingredients to Shopping Cart)

Directions

Place all dressing ingredients in a blender and blend until creamy. Arrange salad vegetables on individual plates and spoon dressing over.
