Udon with Basil Pine Nut Pesto

Serves 4 | Prep Time 10 minutes | Cook Time 15 minutes

1 package Eden Kamut Udon
or any Eden or Traditional Udon

Pesto Sauce

2 Tbsp Eden Extra Virgin Olive Oil

1 Tbsp Eden Shiro Miso
or 1/4 teaspoon Eden Sea Salt

1 clove garlic, minced

1/4 cup pine nuts (pignolia), lightly dry pan toasted

2 Tbsp water

1 1/2 cups fresh basil, packed and chopped


Cook udon per package directions and drain when done. While the udon is cooking, place all pesto ingredients in a blender and blend until creamy. Serve over udon or mix in before serving.
