Tossed Salad with Mustard Herb Dressing

Ingredients

4 cups mixed baby salad greens

1 small cucumber

4 whole red radishes, sliced into thin rounds

1/2 cup organic cherry tomatoes, whole or halved

Dressing

1/4 cup Edensoy Unsweetened
or Edensoy Original

4 tsp Eden Organic Yellow Mustard

1 Tbsp Eden Organic Cherry Juice Concentrate

2 Tbsp Eden Organic Brown Rice Vinegar

1/4 cup Eden Extra Virgin Olive Oil

1/4 tsp Eden Sea Salt

1 Tbsp fresh basil, finely chopped

1/3 cup fresh parsley, finely chopped

1 clove garlic, minced

1 1/2 Tbsp fresh chives, finely chopped

(Add All Eden Ingredients to Shopping Cart)

Directions

Place all dressing ingredients in a blender and blend until creamy. Using a fork, score the skin of the cucumber by drawing the fork down firmly into the skin (optional) and slice into rounds. Arrange the salad ingredients on individual serving plates and serve with dressing.
