Buckwheat with Sauerkraut & Veggies

Cook Time 20 minutes
Heat oil in a medium saucepan and sauté onion for 2 to 3 minutes. Add all remaining ingredients except for the parsley. Cover, bring to a boil, reduce flame to medium-low and simmer 20 minutes. Place in a serving dish and garnish with parsley.
