Vegetable Shell Pasta & Three Bean Salad

Ingredients
Salad
12 ounces Eden Organic Small Vegetable Shells
15 ounces Eden Organic Garbanzo Beans, rinsed, drained
15 ounces Eden Organic Kidney (dark red) Beans, rinsed, drained
15 ounces Eden Organic Great Northern Beans, rinsed, drained
1 1/2 cups celery with leaves, thinly sliced
3 cups organic tomatoes, diced
1 cup fresh parsley, chopped
2 - 12 ounce jars water packed artichokes, drained, quartered
Dressing
1/4 cup Eden Extra Virgin Olive Oil
1/4 cup freshly squeezed lemon juice
2 Tbsp Eden Organic Brown Mustard
1 1/2 tsp Eden Sea Salt
1/2 tsp freshly ground black pepper, or to taste
1 1/2 Tbsp dried basil

Directions
Cook pasta according to package directions. Combine remaining salad ingredients in a mixing bowl. When pasta is done, rinse, drain and add to the mixing bowl. Combine all dressing ingredients in a measuring cup and mix thoroughly. Pour dressing over the salad and gently toss to mix. Let stand for 1/2 hour before serving to allow the flavors to blend.
