Frijoles Refritos – Fried Beans

Serves 4 | Prep Time 20 mins | Cook Time 1 hr 20 mins

Frijoles Refritos (fried beans)

Ingredients
• 1/2 cup EDEN Organic Dry Pinto Beans, soaked
or EDEN Organic Dry Kidney Beans or EDEN Organic Dry Black Beans
• 1/2 tsp EDEN Hot Pepper Sesame Oil
• 1 tsp EDEN Extra Virgin Olive Oil
• 1 clove garlic, minced
• 1/2 cup diced onions
• 1/2 cup diced red bell pepper
• 1/4 cup green bell pepper, diced
• 1 tsp EDEN Sea Salt
• 1/2 tsp ground cumin
• 1/2 tsp minced cilantro or parsley

Directions
Cook beans per box directions. Drain and reserve the cooking liquid - about 1 cup.

Heat oils in a heavy skillet and sauté the garlic and onions for 2 to 3 minutes. Add the peppers and sauté another 5 minutes.

While the vegetables are cooking, mash 3/4 of the beans with a potato masher to form a coarse, thick puree. Add the remaining whole beans and mix while slowly adding enough bean cooking water to form the desired consistency - not too thick or too watery. Add the salt, cumin, and cilantro.

Cover and cook another 10 minutes over low heat, stirring occasionally.

For a spicier flavor, a drop or two of hot sauce can be added.
