Cloudy Juice is a Big Winner

Scientists have declared cloudy, non-clarified fruit juice a big winner when it comes to antioxidant content and health benefits. Cloudy fruit juice, they found, contains up to four times more polyphenols (a class of antioxidants that eliminate free radicals) than does clear juice. The study published in the Journal of the Science of Food and Agriculture concluded that genetically engineered (GMO) derived enzymes used to extract and clarify fruit juice actually reduce antioxidants, flavor, and nutritional value. Apple Strawberry Kanten

Ingredients
• 32 ounces EDEN Organic Apple Juice
• 1 pinch EDEN Sea Salt
• 4 Tbsp EDEN Agar Agar Flakes
• 4 cups fresh sliced strawberries

Directions
Place the juice, salt, and agar in a saucepan and bring to a boil. Reduce the flame to medium-low and simmer about 15 to 20 minutes, stirring frequently until the agar flakes dissolve. Remove from the flame and allow to cool for 15 minutes.

While the juice is cooling, slice the strawberries and place them in a glass or ceramic cassarole dish. When the juice is is slightly cooled, pour it over the fruit. Place in the refrigerator and chill for about 1 hour or so until gelled. Remove, slice, and serve.
