Udon Noodles are Happy Food

Udon noodles are al dente, chewy pasta similar in shape and cook-time to linguine, but square cut. Cooking them the right length of time is key. Organic Whole Grain EDEN Udon is the only 100% whole grain udon. It is made of organic durum wheat. It begins with Eden chosen grain that is fresh milled for each production cycle. Flour is kneaded with pure water and a bit of EDEN Sea Salt that binds the dough, enhances flavor, and preserves the dried pasta. When ready, the dough is rolled out and folded onto itself eight times, then cut to length. Udon with Olives and Fresh Herbs

Serves 7 |  Prep. Time 15 min. |  Cook Time 0:10 min.

Udon with Olives

Ingredients
• 8 ounces any EDEN Udon
• 1 cup pitted Kalamata black olives, coarsely chopped
• 1/4 cup EDEN Extra Virgin Olive Oil
• 1/2 teaspoon EDEN Hot Pepper Sesame Oil
• 2 Tablespoons finely chopped red bell pepper
• 1/2 cup finely chopped fresh parsley
• 1/2 cup finely chopped fresh mint
• 1 Tablespoon finely chopped fresh thyme
• 1 clove garlic, minced
• 2 Tablespoons small capers, drained

Directions
Cook pasta as package directs. While the pasta is cooking, combine all remaining ingredients in a medium-size mixing bowl. Drain and rinse the pasta when al dente. Place the pasta in the mixing bowl and toss with olive and herb mixture. Serve.
